Founded 2015 by Desiree Whitaker. Master distiller Sarah Elsom. High-altitude (~600m) Otago location. Heavy use of New Zealand pinot noir wine casks — distinct cask wood not available anywhere else. Released the 5-year-old 'The Falcon' as the inaugural age-statement bottling in 2021.
