Hudson Valley grain-to-glass distillery on a 75-acre farm in New Paltz. One of the very few American distilleries doing on-site malting. Heritage-grain focus — uses landrace varieties (Excelsior corn, Tibor rye) instead of commodity grain. One of the four founding signatories of the Empire Rye standard. Heritage Whiskey is their flagship — an unaged or barely-aged heritage-grain expression that argues maturation isn't always necessary.
