Founded 2017 by Lars Williams (formerly head of fermentation R&D at Noma) and Mark Emil Hermansen. Empirical doesn't fit conventional spirit categories — uses koji fermentation, vacuum distillation, novel ingredients (kelp, plum kernels, smoked black tea, scotch bonnet peppers). Each release is its own thing. The most experimentally-minded spirits producer in the world.
